- 1 1/2 Cups Timeless French Style Lentils
- 6 Cups Water
- 2/3 Cup Fresh parsley, chopped, OR 1/2 Cup dried
- 1 Tablespoon Basil, dried
- 1 Teaspoon Thyme, dried
- 1 Teaspoon Savory, dried
- 1 Medium Green pepper, chopped
- 1 Medium Onion, chopped fine
- 1/4 Cup Vegetable Oil
- 1/4 Cup Olive Oil
- 1/2 Cup Tarragon vinegar
- 1 Tablespoon Fresh mint, chopped

Instructions
- Rinse lentils.
- Bring water to boil in large sauce pan. Add Timeless French Style Lentils and return to boil, cover, and reduce to simmer. Cook for 25 minutes or until lentils are tender, but still firm, and water has evaporated.
- Combine herbs, peppers, and onions, and add to lentils.
- Combine oils, vinegar, and mint. Add to other ingredients.
- Marinate several hours or overnight.
