Ingredients
- Whisk together:
- 1 3/4 Cups All-purpose Flour
- 3/4 Teaspoon baking soda
- 3/4 Teaspoon Baking Powder
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Cinnamon, ground
- 1/2 Teaspoon Nutmeg, ground
- Beat on medium speed until well blended:
- 1/2 Pound Unsalted butter, softened
- 1 1/2 Cups Light or dark brown sugar, packed
- 2 Medium Eggs
- 2 1/2 Teaspoons Vanilla
- Stir the flour mixture into the buttermixture until well blended. Stir in:
- 1 1/2 Cups cooked & pureed Timeless Harvest Gold Lentils (3/4 cups dry lentils, simmered in about 1 1/2 Cups water , stirred occasionally, until lentils have absorbed all the water. Puree with potato masher or in blender)
- 1 Cup Raisins, chopped
- 2 1/2 Cups Old-fashioned rolled oats

Instructions
- Drop the dough by heaping spoonfuls onto cookie sheets, spacing about 3 inches apart.
- Press lightly to form 1/2-inch thick rounds.
- Bake one sheet at a time, 10-12 minutes, until cookies are lightly browned all over and almost firm at the center.
- Cool on wire rack. Enjoy!
