- 1 1/2 Cups Semi-pearled farro
- 7 Cups Water, divided
- 1 1/2 Teaspoons Kosher salt, divided
- 8 Ounces Broccoli, cut into small florets
- 1/2 Cup Black or Kalamata olives, pitted
- 1 Medium Red bell pepper, cut into thin strips
- 3/4 Cup Parmesan or Feta cheese, crumbled
- 1/4 Bunch Chives or scallions, snipped into rounds
- 1/4 Cup Purple onions, chopped
- 1/4 Cup Sherry vinegar
- 1/4 Cup Olive oil, extra virgin
- 1/2 Teaspoon Black pepper, freshly ground
- 1/2 Teaspoon Prepared mustard

Instructions
- In a medium sauce pan, add the grain to 4 cups of water and bring to a boil over high heat. Cover and simmer until grain is almost tender, about 20 minutes. Add 3/4 teaspoon salt and simmer until grain is tender, about 10 minutes longer. Drain well. Transfer to a large bowl and let cool.
- In a medium sauce pan, add 1/4 teaspoon salt to 3 cups of water and bring to a boil over high heat. Add the broccoli and stir. Cook for 2 minutes. Drain and cool in iced water.
- Once the grain has cooked, add the broccoli, olives, red pepper, cheese, and chives or scallions. Stir to combine.
- In a small bowl, mix together the vinegar, olive oil, mustard, pepper, and the remaining 1/2 teaspoon salt. Stir to combine. Pour the dressing over the salad. Toss to combine, adjust seasoning, and serve.
